I’ve just returned from a short stay in Amsterdam and I loved it. If you’re into your coffee’s and cafe culture then you too will love the dam. I’d heard so much about this eclectic city and yes, mainly how the opportunity to buy weed and magic mushrooms exists on most canal corners and how you can pop into cafes and indulge in both of these things openly. With so much exercise we needed to eat a lot to keep our energy up. And eat we did and very well too. Breakfast was a feast of Lucy Rocks musleis (vegan, gluten free), Pip & Nut butters, fresh fruit, chia puddings, custard tarts (we were in Portugal – it would be ride not to), eggs and toast. Lunch was usually a picnic on the beach and this was a simple chicken salad. Fruit, crisps and biccies were also on tap. This wasn’t a retreat for turning the treats down! For me, dinner was when I got really excited. Rainbow arrays of exotic salads, spreads, herbs and veggies were presented with artistic flair, accompanied by bigger, heartier dishes like risotto, pasta, paella and big meat dishes.… Continue reading...

Avo-on-toast with Roasted Red Pepper spread & chilli Roasted Red Pepper Chilli Mira: A few years ago, while I was travelling in Tuscany, my friend had organised a vegetarian cooking class with two lovely Italian women in their home – and this turned out to be the best part of the trip. It was there that I roasted peppers for the first time, spreading some goat’s cheese on crostini and then layering thin slices of red and yellow peppers with fresh herbs.
