Beetroot Chocolate Brownie Sundae

Ingredients:

1 Chocolate Brownie Quest bar

250 g coconut/Fage natural 0% Greek yogurt

1 beetroot, 3cm x 2cm piece of ginger, half a lime, 250g plains oya yogurt.

1 teaspoon of chia seeds.

1 kiwi slice.

Method:

1. Place the beetroot, lime juice, ginger and soya yogurt into a blender and blend until runny.

2. Unwrap one Chocolate Brownie Quest bar and place it in the microwave for 10  seconds. This turns the bar gooey. Then place the bar into a small bowl and add two teaspoons of coconut oil and a little piping hot water and stir so it becomes a paste. Take the paste and line the base layer of a cocktail glass.
3.  Add the coconut yogurt or natural Greek yogurt on top of the Quest mixture (approx 2cm height).
4. Pour the beetroot smoothie blend over the yogurt layer. Scatter the chia seeds over the top and add the kiwi slice to garnish.

Sweet Potato Sundae

   Ingredients:
   1 large sweet potato
   2  tablespoons of almonds
   2 teaspoons of coconut oil
   500g Fage 0% greek yogurt or 500g coconut yogurt.
    Cinnamon
    1 and 1/4 Cinnamon Swirl Quest Bars
Date Syrup (optional)

Method:
1. Cut one large sweet potato into 2cm pieces and place in the oven for 20- 30minutes until soft on a high heat (220’C).2. Meanwhile, unwrap one Cinnamon Swirl Quest bar and place it in the microwave for 10 seconds. This turns the bar gooey. Then place the bar into a small bowl and add two teaspoons of coconut oil and a little piping hot water and stir so it becomes a paste. Take the paste and line the base layer of a cocktail glass.
3. Layer either coconut yogurt or natural greek yogurt (I love using fage 0% Greek yogurt) on top of the mixture (approx 2cm height).
4. Chop the almonds into small pieces.
5. Place 1/4 of a Cinnamon Swirl bar into the oven for 5 minutes.
6. Take the sweet potato out of the oven, peel off the skin and mash it in a bowl, adding two teaspoons of coconut oil and a good sprinkling of cinnamon.
7. Take the Cinnamon Swirl bar out of the oven. Dice into small pieces.
8. Layer the sweet potato mixture over the yogurt.
9. Add the chopped almonds and the diced Cinnamon Swirl bar to the top and sprinkle with cinnamon. Sweeten with a squirt of date syrup if preferred.

Lemon Pie Sundae

Ingredients:  

     1 Lemon Pie Quest Bar

     500g Fage 0% Greek yogurt or Coconut yogurt

     Zest of 1/2 lemon

     Juice of half a lemon

     One lemon slice

Method:

Unwrap one Lemon Pie Quest bar and place it in the microwave for 10 seconds. This turns the bar gooey. Then place the bar into a small bowl and add two teaspoons of coconut oil and a little piping hot water and stir so it becomes a paste. Take the paste and line the base layer of a cocktail glass.

Add the lemon juice to the coconut yogurt or natural Greek yogurt, stir,  and spread on top of the Quest mixture (approx 5cm height).

Grate the lemon zest and sprinkle on top of the yogurt.
